This recipe for Easy Chicken Fajitas is a game-changer. It is a healthy chicken dinner recipe made using a few store-bought ingredients cooked in a skillet and it comes together in less than 20 minutes. Skip the takeout and enjoy this Mexican fave at home.
It could be said that these tasty fajitas were born out of necessity. During the COVID-19 pandemic, I have worked at not going out to the store by utilizing what I already have.
I had two packages of Perdue Simply Organics Chicken Breast Strips that I had previously purchased (BOGO at Publix!) and needed to use them before their “Best By” date. I also had some organic tortillas that needed to be consumed.
I always have cumin, chili powder, and salt – so coming up with a Mexican dish was natural. Lucky me, I also had a bag of frozen bell peppers.
Enough of the filler talk – let’s get on to this simple, but delicious, recipe.
How To Make Easy Chicken Fajitas
For this easy chicken dinner, there are two components – the homemade seasoning blend and the actual fajita filling. To make both, you need the following ingredients:
Fajita Seasoning Blend
- 2 Tablespoons cumin
- 1 Tablespoon chili powder
- ½ teaspoon salt
Fajitas
- 1 16- ounce bag of frozen bell peppers and onions
- 2 6- ounce bags chicken breast strips
You start by making the fajita seasoning blend by combining cumin, chili powder, and salt.
Next, heat a non-stick skillet on medium-high heat. Add frozen bell peppers and onion and cook for 3 minutes or until vegetables start to soften.
Add chicken breast strips and seasoning blend and blend well. Adjust heat to the low setting and simmer for 5 minutes.
Remove from heat and serve with your favorite tortillas and toppings.

Note: These fajitas are really juicy – that happens when you use frozen veggies. Be sure to either scoop the fixings out and let them drain or have lots of napkins ready when you eat them.
You can also make this recipe using fresh bell peppers and onions as well as with frozen cooked chicken strips. You will need to add about ½ a cup of water. If using frozen cooked chicken, follow the directions on the package. I found that I am able to cook the chicken and the fresh peppers at the same time.
