I’m Lynda Self, and in a nutshell, I am a mom of 2 children and 1 dog, a wife of 1, and a messy cook who takes life one bite at a time. I have a bachelor’s degree in banking and am a registered nurse. I like good food and good books, and I love to travel. Currently, I call Alabama home, but my heart loves to roam.
When it comes to Food
I realize that we are all on a journey but might be on different paths. While I have tried just about all of the various diets out there – Paleo, low carb, keto, gluten-free, Weight Watchers, Nutrisystem, Jenny Craig…(you get the idea), I realize that the best diet is the one that works best for the individual.
For me, that is being at peace with myself for who I am and behaving myself in the kitchen. I feel like the more plants we eat and the less meat the better off we are. With that being said, I tried following a vegetarian diet, but my triglycerides indicated that it was not the right diet for me. I totally understand the struggles that people have when it comes to food. I don’t judge others for where they are on their journey. It is my hope that I might be able to inspire others wherever they are on their path toward health and happiness.
On a personal note, my personal favorite thing to eat is a hearty salad, my husband’s favorite is Chicken and Dumplings along with Tea Cakes, and my kids are happy when I make them brownies.
To Travel is to Live
Is there anything more fun than being in an airport surrounded by people from different cultures? Okay, I get that is not for everyone, but we learn so much when we get out of our comfort zones. Not only do we learn about others, but we also learn more about ourselves – our strengths, our weaknesses, and sometimes we discover and find new things to enjoy. There is beauty everywhere – we just have to get out there and look for it.
