We’re going to share with you the ultimate pecan cookie recipe that will satisfy all your cookie dreams. Toasted pecans, chewy oatmeal, and crispy Rice Krispies all come together in one delicious cookie.
Ingredients
Let’s take a look at all of the ingredients that go into these tasty treats:
- 1 cup of butter (2 sticks)
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 ½ cups oatmeal
- 1 ½ cups chopped pecans, toasted
- 2 cups Rice Krispies

Instructions
- Preheat oven to 350 degrees Fahrenheit. Line baking or cookie sheets with parchment paper.
- Cream butter and sugar at high speed in a large mixing bowl of an electric mixer using the paddle attachment. (If you can’t find it, it’s perfectly fine to use the whisk attachment.)

Next, beat in the eggs and vanilla, then mix until smooth.
- Combine flour, baking soda, and baking powder. Add the flour mixture to the wet ingredients with your mixer on low. Mix until the flour is well incorporated.

- The crackly goodness gets added next – oatmeal, pecans, and Rice Krispies. You can use your mixer at low speed to help incorporate these ingredients, or feel free to get an upper body workout by mixing them by hand.

- Using a cookie scoop, place scoops of cookie dough onto a parchment or Silpat-lined cookie sheet. (I like to bake cookies on a baking stone.) Medium-sized scoops work well for these.

- Bake at 400 degrees for about 10 to 12 minutes, or until they are a nice golden color.

Ready to make the best pecan cookies ever? Let’s cover the essentials — toasted nuts, chewy texture, and a few baking tricks — plus some fun ideas for gifting your sweet creations.
Toasted Pecans: The Secret to Deep Flavor
Toasting pecans brings out their rich, buttery flavor. Spread them on a baking sheet and bake at 350°F for 8–10 minutes, stirring once, until fragrant and golden. Cool, chop, and fold them into your dough for that irresistible crunch and nutty depth that makes these cookies shine.
The Chewy Cookie Combo
The secret to that perfect chewy-meets-crispy texture? Oats and Rice Krispies. Oats add heartiness and flavor, while the cereal keeps things light and crisp. Together, they give every bite the perfect balance of chew and crunch.
Quick Baking Tips
- Soften butter properly — room temp, not melted.
- Measure flour right — spoon and level for accurate results.
- Watch your oven — cookies should be lightly golden at the edges and soft in the center. If using a baking stone, let them sit 3–5 minutes before transferring to a rack.
Packaging & Gifting Ideas
These cookies are too good not to share! Pack them in classic cookie tins or Mason jars tied with ribbon and a handwritten note. For something extra special, build a gift basket with your cookies, local honey, and a bag of coffee — a sweet surprise anyone would love.
