Why You’ll Love This Casserole

  • Crowd-pleaser – Even picky eaters won’t turn down a plate.
  • One-pan dinner – Protein, veggies, and carbs all baked in a single dish.
  • Classic comfort food – Cheesy, creamy, and oh-so-satisfying.
  • Versatile – Easy to swap in shortcuts like precooked chicken, microwave broccoli, or leftover rice.

Ingredient Highlights

Ingredients laid out to make chicken broccoli rice casserole.
  • Chicken – Juicy and tender when cooked fresh, or skip the step with rotisserie chicken for convenience.
  • Broccoli – Fresh florets keep things crisp-tender, but frozen broccoli works just as well.
  • Rice – Long-grain rice absorbs the creamy sauce, but pre-cooked rice cuts the bake time down.
  • Cheese – A generous helping of cheddar ties it all together.

Instructions

  1. Preheat your oven to 350 and spray a 9×13-inch baking dish or casserole dish with nonstick cooking spray.
  2. Cook rice according to package directions. (I like to use the Instant Pot to cook rice. Once I tried it, I haven’t gone back to cooking it on the stovetop.)

Tips & Shortcuts

While the recipe below calls for cooking the chicken and rice from scratch, you can easily take a few shortcuts to get dinner on the table even faster:

  • Use precooked chicken – Rotisserie, grilled, or leftover baked chicken all work beautifully. Just shred or chop and fold it in.
  • Microwave broccoli – Steam-in-bag broccoli florets make prep a breeze.
  • Start with precooked rice – Leftover rice or quick-cook pouches work just fine. Simply mix them in with the sauce and chicken before baking.
  • Stir 2 cups of Pepper Jack cheese in step 4 to up the spiciness of the dish. To really “southernfy” this recipe, add pimento cheese.
