Easy Beef Stroganoff Recipe

Ingredients

  • 2 pounds beef chuck roast, sliced thin
  • 2 tablespoons oil
  • ½ cup diced white onion
  • salt and black pepper
  • 3 tablespoons flour
  • 2 cups beef broth
  • 1 package of sliced fresh mushrooms (white button mushrooms work great)
  • ½ cup full-fat sour cream
  • 1 (8-ounce) package of wide egg noodles, cooked, drained, and kept warm

Instructions

  1. Add oil, beef strips, and onion to a skillet over medium-high heat. Cook until the beef has browned. Season with salt and pepper.

  1. Add flour and mix well. Add beef broth and stir frequently until boiling and bubbly. Make sure the seasoned sauce is whisked until smooth.

  1. Reduce the heat and simmer for 10 minutes.
  2. Add mushrooms and cook for 5 minutes or until soft.

  1. Reduce the heat to low and add sour cream.

  • Reduce heat to low and add sour cream.
  • Stir until smooth and heated through.
  • Serve immediately on top of noodles.

Notes

  1. Any lean (non-fatty) meats are perfect. 
  2. You can skip the pasta noodles and serve over other options like green beans, mashed potatoes, or even a baked potato
  3. Mixing up the kind of pasta you choose to serve, changes the texture. 
  4. Try adding a packet of Ranch Dry Seasoning to the mixture for EXTRA flavor.
  5. Want to save some money? You can easily substitute 1 pound of ground beef in place of the chuck roast. Just precook the ground beef, make the sauce separately, and mix them together.
