- 2 tablespoons oil
- 1 pound raw shrimp, peeled and deveined
- 14 oz pork or chicken sausage – andouille sausage is a natural for this recipe
- 1 cup zucchini, sliced
- 1 medium red bell pepper, cut into cubes
- 4 garlic cloves, peeled and crushed
- 2 lemons, quartered
- Sea salt, to taste
- Ground black pepper, to taste
- 2 tablespoons Cajun Seasoning – You are welcome to use homemade Cajun seasoning or simply buy a bottle at the store. (I used Weber’s N’Orleans Cajun Seasoning.)
- 1 teaspoon dried oregano

- Preheat the oven to 400 Fahrenheit. Spritz a sheet pan with cooking spray.
- Combine shrimp, sausage, zucchini, bell pepper, garlic and lemon in a large bowl. Season with salt, pepper, oil, cajun seasoning and oregano. Toss until all is coated.
- Spread the shrimp mixture onto a sheet pan in a single layer.
- Bake for 15-20 minutes on the middle rack of the oven.
When baking shrimp, you will want to ensure that they are all opaque – meaning you can no longer see through them. The shrimp should also be slightly pink in color.
Once done, remove from oven and garnish with parsley if desired. Serve over white rice. Enjoy!
