Everything Bagel Cucumber Rolls
Looking for a no-cook, low-carb snack that still feels a little fancy? These Everything Bagel Cucumber Rolls check all the boxes: crisp cucumber, creamy cheese, smoky salmon, and that everything-but-the-bagel vibe we all love. They’re perfect for brunch spreads, afternoon snacks, or whenever you’re craving something light but satisfying.

It’s like brunch met sushi and had a low-carb baby—no bagel required.
Ingredients
- 1 English cucumber
- 4 ounces cream cheese softened
- 1 tablespoon fresh dill chopped (optional but delicious)
- Everything bagel seasoning to taste
- 4 ounces smoked salmon thinly sliced
Directions
- Prep the cucumber: Use a mandoline or vegetable peeler to slice the cucumber lengthwise into thin strips.
- Dry it out: Lay the slices on paper towels and pat them dry – nobody wants a soggy roll-up situation.
- Spread the base: Evenly spread softened cream cheese over each cucumber slice. For an extra kick, try mixing in a bit of sriracha and garlic powder to the cream cheese first.
- Season: Sprinkle the Everything Bagel seasoning generously over the top.
- Layer it up: Add the smoked salmon. If you want to get fancy, toss in some thin strips of red bell pepper, avocado, or carrot for extra color and crunch.
- Roll it tight: Carefully roll each strip into a spiral. If your cucumber strips are extra thin, overlap two for better structure.
- Chill: Pop them in the fridge for 30 minutes to help them hold their shape.
- Slice and serve: Cut into bite-sized pieces just before serving and finish with a sprinkle of toasted sesame seeds for that chef’s kiss.

Tips & Variations
- Dairy-free? Use a plant-based cream cheese and skip the salmon if you’re following a vegan diet.
- Make it a meal: Add arugula or microgreens for an extra boost of flavor and nutrients.
- Snack smart: These store well in the fridge for a few hours, so they’re a great make-ahead snack.
- Dipping fun: Serve with a little soy sauce or spicy mayo on the side for an extra kick.
- Presentation matters: Garnish with fresh dill or edible flowers if you’re going for the “ooh, what’s that?!” look at brunch.
