A smash burger gets its mouthwatering flavor from pressing a ball of seasoned ground beef onto a hot griddle or skillet. This “smashing” method creates a crispy crust while keeping the inside juicy and tender. For these tacos, that same technique is applied directly to a soft flour tortilla, so every bite is packed with savory burger goodness wrapped up taco-style.

Top each taco with melted mozzarella, a homemade tangy burger sauce, and crisp shredded lettuce with chopped onions. It’s a quick weeknight dinner or weekend crowd-pleaser that’s packed with flavor.

How To Make Smashburger Tacos

Make the Smash Burgers

  1. Season the ground beef with salt and pepper. Divide into 8 equal portions and roll each into a ball.
  2. Press each meatball onto a tortilla, flattening it with your fingers.
  3. Heat a large skillet or griddle over medium-high heat with a small amount of oil.
  4. Place a tortilla meat-side down in the skillet. Press the beef down with a spatula to form a thin patty covering most of the tortilla.
  5. Cook for about 1½ to 2 minutes until it starts to brown. Press down again if needed.
  6. Flip the tortilla and burger over. Sprinkle mozzarella cheese on top.
  7. Cover the skillet with a lid to help the cheese melt, and cook for an additional 1½ to 2 minutes.
  8. Remove and repeat with the remaining burgers.

Prepare the Sauce

Stir together mayonnaise, dill pickle relish, Dijon mustard, white vinegar, paprika, onion powder, and garlic powder until smooth. Set aside.

Assemble the Tacos

  1. Combine chopped onions and shredded lettuce.
  2. Drizzle sauce over the toppings.
  3. Top each smash burger with lettuce and onions, then fold the tortilla in half to form a taco.
  4. Serve right away and dig in!
