Ingredients

Smash Burgers

  • 1 pound ground beef
  • Salt and pepper to taste
  • 8 small flour tortillas
  • ½ cup shredded cheese
  • Oil avocado oil is a great choice

Sauce

  • ½ cup mayonnaise
  • ¼ cup dill pickle relish
  • 2 tbsp Dijon mustard
  • 1 tbsp white vinegar
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder

Toppings

  • 1 cup shredded iceberg lettuce
  • ¼ cup chopped onions

Instructions

Make the Smash Burgers

  • Season the ground beef with salt and pepper. Divide into 8 equal portions and roll each into a ball.
  • Press each meatball onto a tortilla, flattening it with your fingers.
  • Heat a large skillet or griddle over medium-high heat with a little oil.
  • Place a tortilla meat-side down in the skillet. Press the beef down with a spatula to form a thin patty covering most of the tortilla.
  • Cook for about 1½ to 2 minutes until it starts to brown. Press down again if needed.
  • Flip the tortilla and burger over. Sprinkle mozzarella cheese on top.
  • Cover the skillet with a lid to help the cheese melt and cook for another 1½ to 2 minutes, or until cooked through.
  • Remove and repeat with remaining burgers.

Prepare the Sauce

  • Stir together mayonnaise, dill pickle relish, Dijon mustard, white vinegar, paprika, onion powder, and garlic powder until smooth. Set aside.

Assemble the Tacos

  • Combine chopped onions and shredded lettuce.
  • Drizzle sauce over the toppings.
  • Top each smash burger with lettuce and onions, then fold the tortilla in half to form a taco.
  • Serve right away and dig in!
