Instructions
Make the Smash Burgers
- Season the ground beef with salt and pepper. Divide into 8 equal portions and roll each into a ball.
- Press each meatball onto a tortilla, flattening it with your fingers.
- Heat a large skillet or griddle over medium-high heat with a little oil.
- Place a tortilla meat-side down in the skillet. Press the beef down with a spatula to form a thin patty covering most of the tortilla.
- Cook for about 1½ to 2 minutes until it starts to brown. Press down again if needed.
- Flip the tortilla and burger over. Sprinkle mozzarella cheese on top.
- Cover the skillet with a lid to help the cheese melt and cook for another 1½ to 2 minutes, or until cooked through.
- Remove and repeat with remaining burgers.

- Stir together mayonnaise, dill pickle relish, Dijon mustard, white vinegar, paprika, onion powder, and garlic powder until smooth. Set aside.
