These Smash Burger Tacos combine crispy-edged beef patties, melted cheese, and a tangy sauce, all tucked inside soft tortillas for a fun twist on taco night. Quick, tasty, and impossible to eat just one!
Season the ground beef with salt and pepper. Divide into 8 equal portions and roll each into a ball.
Press each meatball onto a tortilla, flattening it with your fingers.
Heat a large skillet or griddle over medium-high heat with a little oil.
Place a tortilla meat-side down in the skillet. Press the beef down with a spatula to form a thin patty covering most of the tortilla.
Cook for about 1½ to 2 minutes until it starts to brown. Press down again if needed.
Flip the tortilla and burger over. Sprinkle mozzarella cheese on top.
Cover the skillet with a lid to help the cheese melt and cook for another 1½ to 2 minutes, or until cooked through.
Remove and repeat with remaining burgers.
Prepare the Sauce
Stir together mayonnaise, dill pickle relish, Dijon mustard, white vinegar, paprika, onion powder, and garlic powder until smooth. Set aside.
Assemble the Tacos
Combine chopped onions and shredded lettuce.
Drizzle sauce over the toppings.
Top each smash burger with lettuce and onions, then fold the tortilla in half to form a taco.
Serve right away and dig in!
