If you’ve been keto for a while, you’ve probably heard of “fat b*mbs.” They’re small, high-fat, low-carb snacks designed to keep you satisfied between meals. The name, though, doesn’t always sound appealing to new keto eaters or to Google’s search engine.

That’s why I’m giving this recipe a fresh update as Keto Pizza Bites. Same cheesy, pepperoni-studded flavor—just with a friendlier name. These bites are savory, satisfying, and taste like little poppable pizza snacks. Whether you’re meal prepping for the week or need a quick party appetizer, they’re a keto staple worth keeping on repeat.

These incredible fat bites taste like pizza morsels and will blow your mind! (See what I did there?!) The recipe comes from The Everything Keto Diet Meal Prep Cookbook by Lindsay Boyers, CHNC, and it’s one that you might find yourself making over and over again.

Directions

  1. Line a baking sheet with parchment paper.
  2. Combine the chopped pepperoni, olives, and basil with the softened cream cheese and Parmesan in a bowl, then mix with a handheld mixer on low speed until fully incorporated.
  3. Refrigerate until chilled, about 30 minutes.
  4. Remove from refrigerator and divide into six equal portions.  Form each portion into a ball and transfer each ball to the prepared baking sheet.
  5. Chill in the refrigerator for 2 hours.  Transfer to an airtight container and refrigerate for up to one week before eating.

Enjoy them as a low-carb snack or serve them to guests as a ketogenic appetizer. Or just make them because they are pretty darn awesome!

Ingredients
