FAQs

Do I have to use semi-sweet chocolate chips?

While semi-sweet chocolate chips make delicious fudge, feel free to use other varieties of chocolate to make fudge in various flavors. I prefer the taste of semi-sweet chocolate, but feel free to use milk chocolate chips, butterscotch chips, mint chocolate chips, white chocolate, or dark chocolate chips.

Can I add vanilla extract for extra flavor?

Certainly! Enhance the taste with a teaspoon of vanilla extract.

Recipe Tips

Do not use evaporated milk. Using sweetened condensed milk instead of evaporated milk in fudge recipes is crucial for achieving the right consistency and sweetness. Sweetened condensed milk contains sugar, giving the fudge its desired sweetness, while evaporated milk is unsweetened. The sugar in sweetened condensed milk also contributes to the fudge’s texture, helping it set properly during cooling.

Tapping the pan. After pouring the fudge mixture into the prepared pan, gently lift the pan about an inch off the counter and allow it to drop back down. You can do this by holding the pan’s handles and giving it a light tap against the counter. If you’d like to minimize the sound and provide a buffer, place a towel on the counter beneath the pan before tapping. This helps evenly settle the fudge, removing air bubbles and creating a smooth surface.

Variations

While this creamy fudge is great plain, you can customize it with a variety of add-ins to create a personalized treat. Here are some tasty additions for your fudge base:

  1. Chopped Nuts: Add texture and nutty goodness with chopped walnuts, pecans, almonds, or hazelnuts. They complement the smooth fudge with a satisfying crunch.
  2. Dried Fruits: Add a chewy element by folding in chopped dried fruits such as cherries, apricots, or cranberries. Their natural sweetness enhances the overall flavor.
  3. Espresso Powder: Elevate the chocolate flavor by incorporating espresso powder. This addition lends a rich, coffee-infused depth to your fudge.
  4. Sea Salt: Sprinkle a pinch on top for a sweet-and-salty contrast. The saltiness enhances the overall taste, making each bite more dynamic.
  5. Flavor Extracts: Experiment with peppermint, almond, or orange extracts to infuse your fudge with unique, aromatic notes.
  6. Mini Marshmallows: For classic rocky road fudge, fold in mini marshmallows. They add a gooey, pillowy element to the fudge.
  7. Crushed Cookies or Biscuits: Add a playful crunch by mixing in crushed cookies or biscuits. Think chocolate sandwich cookies, graham crackers, or even shortbread.
  8. Toasted Coconut: Elevate tropical vibes with toasted coconut. It adds a delightful chewiness and a hint of coconut flavor.

Feel free to get creative and combine several add-ins to make your fudge truly one-of-a-kind. Just add a little at a time. You can always add more, but if you add too much, it may affect the fudge’s texture and consistency. Start with a modest amount of your chosen add-ins, whether it’s nuts, dried fruits, or flavor extracts. It’s crucial to add flavor extracts gradually, as they can significantly impact the fudge’s taste.

I made this last night and it came out perfectly with coconut condensed milk! Wonderful melt-in-your mouth goodness just how I remember non-vegan fudge! Thank you so much for sharing! 😊

    1. I am so glad that your modifications worked! I imagine that the slightly coconutty flavor from the condensed “milk” combined with melted vegan chocolate chips would make the flavor reminiscent of a Mounds bar.

NEVER IN MY LIFE would I have imagined that —>I <— would have made a tasty fudge with just 3 ingredients!
I did use the semi-sweet, however, I love a sweeter fudge and wished I would have added a wee bit of sugar or have used milk chocolate chips. Again, that's just my taste: my husband and daughter loved it. I also added chopped pecans (not many).

    1. I am sorry it did not work out for you. Do you recall what brand of products that you used? (I am trying to figure out what could have gone wrong.)

      1. I am replying regarding Gary’s post saying the fudge didn’t set up. I purchased what I thought was condensed milk at Dollar tree. Thankfully I read the ingredients before opening the can. It is sweetened condensed filled milk containing skim milk , palm fat etc. I was wondering if Gary bought something like this. It definitely won’t set up. Always read the labels. Just a thought.
