Cajun Chicken Recipe

Ingredients
This simple chicken skillet dinner is full of flavor and is easy to make. You will need the following ingredients to make Cajun chicken:
- 1 pound chicken breasts, skinless boneless, cut into 1-inch chunks
- 2 tablespoons Cajun seasoning, divided
- 2 tablespoons extra virgin olive oil, divided
- Sea salt, to taste
- Ground black pepper, to taste
- 1 small white onion, diced
- 2 garlic cloves, minced
- 1 cup red bell peppers, cut in cubes
- 1 cup mushrooms
- 1 cup broccoli florets
- 2 tablespoons butter
- Ā½ teaspoon honey, optional
- Ā½ teaspoon red chili flakes
How To Make Cajun Chicken in a Skillet
Place chicken pieces in a large bowl and add 1 tablespoon of the cajun seasoning,1 tablespoon oil, salt, and pepper. Set aside for 15 minutes.
Prepare the vegetables.
Heat a non-stick skillet on medium heat with the remaining oil. Add chicken and cook until chicken is cooked through, about 5 – 6 minutes. Remove the chicken from the skillet and set it aside.
In the same skillet, add the onion and stir-fry on medium heat until tender.
Add garlic, bell peppers, broccoli, and mushrooms. Season with salt, pepper, and 1 tablespoon of Cajun seasoning mix. Cook until the vegetables are fragrant.
Add butter and butter back into the skillet. Stir to melt butter.
Pour honey and sprinkle with chili flakes. Stir and cook for 1-2 minutes until heated through.
Remove and serve over rice, quinoa, or even on top of a bowl of pasta.
Feel free to garnish this with fresh parsley and even a little squeeze of lime juice for added flavor.
While this is super easy to make during the weeknight, to save even more time you can season your chicken and prep the veggies the night before. Keep them refrigerated until you get ready to cook.
Notes
While some people may prefer to have steaks on the rare side, that isn’t safe when cooking chicken. Be sure to cook the chicken until it is cooked through and no longer pink in the center. An internal temperature of 165 degrees Fahrenheit is considered safe to eat.
If you are on a low-carb or keto diet, serve this dish by itself (10 grams of carbohydrates and 3 grams of fiber per serving) or on top of riced cauliflower.
Because you will be cooking small pieces of chicken, it will be difficult to actually use a thermometer properly. One thing that I do to test chicken is to see if it will easily “cut” in half with a spatula or spoon. If it does and the inside is not pink, it should be cooked well.
