Nachos get a makeover with this recipe thanks to Cool Ranch-flavored Doritos and cajun seasoning. Let’s take a look at how to make these simple but tasty nachos.

This recipe makes enough to serve 4 people. You can easily double the recipe to serve more or to have larger portions.

Ingredients

You need the following ingredients:

  • ½ medium white onion, chopped
  • 2 Tablespoons vegetable oil
  • 1 pound ground beef
  • 1 ½ teaspoons Cajun seasoning
  • 1 ½ teaspoons corn starch
  • ½ cup tomato sauce
  • 2 cups cheddar cheese and/or Pepper Jack cheese
  • 1 small bell pepper, chopped
  • 1 medium jalapeno, sliced
  • 1 bag Tostitos
  • 1 hand full cilantro, chopped
  • Salt & pepper, to taste

How To Make Skillet Doritos Nachos

Once you have all of the ingredients in place, cook the onion in vegetable oil in a skillet over medium heat until the onion starts to become translucent.

Next, add the ground beef and Cajun seasoning and cook until the beef is no longer pink. Add the cornstarch and tomato sauce and simmer for 2-3 minutes. Be sure to make sure that the beef is coated with the sauce completely. You can add a little bit of water, if necessary, 1-2 tablespoons at a time.

The next step is to turn off the heat and remove the pan from the stovetop. This is a good time to taste-test the beef and adjust the seasonings if needed. A little salt and pepper or a smidge more of cajun seasonings could be needed.

Go ahead and preheat your oven to 350 degrees Fahrenheit. While it is heating, place a layer of Doritos in the bottom of 8-inch cast iron skillets for single servings or in a large skillet for sharing.

On top of the layer of Doritos, add a layer of seasoned ground beef.

Top the meat with shredded cheese. Cheddar cheese is good, but use pepper Jack if you want to kick the heat up a notch.

Bake for 5 to 10 minutes or until the cheese has melted. Remove it from the oven and garnish with the remaining chopped onion, cilantro, and jalapeños. Add more Doritos around the side – it will create a sunburst or sunflower design.

These nachos are loaded with flavor from the Doritos and Cajun seasoning. If you aren’t familiar with Cajun seasoning, it is typically a blend of paprika, garlic powder, oregano, salt, pepper, onion powder, and cayenne for some heat.

Skillet Nachos Variations

If you want to serve skillet nachos on meatless Mondays rather than on Taco Tuesdays, then you can substitute 1-2 cans of black beans for the meat. After cooking the onion, add the beans (don’t drain them), seasoning, cornstarch, tomato sauce, and simmer for 2-3 minutes. Follow the rest of the directions in the recipe.

Ingredients

  • 2 Tablespoons vegetable oil
  • 1 medium white onion chopped
  • 1 pound ground beef
  • 1 ½ teaspoons corn starch
  • 1 ½ teaspoons Cajun seasoning
  • ½ cup tomato sauce
  • 2 cups cheddar cheese
  • 1 small bell pepper chopped
  • 1 medium jalapeno sliced
  • 1 bag Tostitos
  • Salt & pepper to taste

Instructions

  • In a large sautee pan, heat enough vegetable oil on high heat, add 2/3 the amount of chopped white onion, and sauté for a few minutes until the onion turns golden brown.
  • Add ground beef followed by corn starch and Cajun seasoning to the pan. Continue to stir the pan until the beef is fully cooked.
  • Add tomato sauce and cook for another 2-3 minutes, make sure to coat the beef with tomato sauce completely.
  • Turn off the heat. Remove the pan off the stovetop. Taste the beef and adjust seasoning with salt & pepper, if necessary.
  • Preheat oven to 350F.
  • In a cast iron skillet or a casserole, put Tostitos chip in 1 layer followed by half amount of sauteed beef. Then top the beef with half the shredded cheddar cheese.
  • Then add the remaining cooked ground beef and top it with the remaining shredded cheese.
  • Bake in the oven for 5 to 10 minutes or until the cheese on top has melted completely.
  • Take the pan out of the oven, top with remaining chopped onion, cilantro, jalapeno. Add more Tostitos to the pan if desire. Serve immediately.

Notes

Top these tasty nachos with garnishes like cilantro, diced bell peppers, jalapeño, sour cream, and/or black olives.
