Easy Crockpot Chicken Fajitas Recipe
Chicken fajitas are a classic Tex-Mex dish that is typically served as an appetizer or main course. Traditionally, they’re made with beef and cooked on the stovetop over high heat. But this slow cooker chicken fajita recipe makes it easier to prepare your dinner!
Skip the tortillas and it’s a great low-carb, high protein alternative to beef fajitas.
The slow cooker is an especially handy kitchen tool because it frees up your stovetop and oven space so that other dishes can cook simultaneously (e.g., rice or refried beans).
Chicken fajitas made in the slow cooker are not only delicious, but they are also easy to make and allow you to be hands-off during the cooking process. You can prep everything in just a few minutes and then let it cook while you’re at work, or even better, lazing around on your couch!
These chicken fajitas are delicious wrapped in a warm flour tortilla and topped with yummy items like shredded cheese, sour cream, guacamole, etc. If you have picky eaters, serve the cooked chicken with some shredded lettuce and top with cheese and call them chicken tacos!
Ingredients
To make chicken fajitas in a slow cooker, you need the following items:
- ยฝ red bell pepper sliced
- ยฝ yellow bell pepper sliced
- ยฝ green bell pepper sliced
- ยฝ onion sliced
- 1 pound chicken breasts boneless, skinless
- ยฝ cup chicken broth
- 1 packet fajita seasoning
- 2 cloves garlic minced
- 10 ounces Ro*Tel
For Serving
- 8 flour tortillas
- 2 cups cheddar cheese optional
- 1 cup sour cream optional
- 1 cup guacamole optional
- 1 cup salsa
- 2 limes quartered
How to Make This Recipe
Prepping this meal is quick and easy. For the chicken breasts, cut them in half so that they will cook thoroughly.
Cut the bell peppers in half and then cut each half into slices. Do the same with the onion. Feel free to use different colored bell peppers. Red onions work just as well as yellow or Vidalia.
Spray your CrockPot or slow cooker with non-stick spray or use a liner to help keep clean-up to a minimum. Place the sliced bell peppers and onion in the bottom of the crock.
Add the chicken, fajita seasoning, garlic, and a can of Ro*Tel. (If you like to make things from scratch, you could use homemade fajita seasonings in this recipe. One heaping tablespoon should do the trick!)
Put the lid on your slow cooker and cook on LOW for at least 6 hours and let the slow cooker do all of the work. If you are in a hurry, you can cook it on HIGH for 3 hours. If the chicken doesn’t shred easily, cook on HIGH for 15 to 30 more minutes (even if you originally were cooking it on LOW.)
Once dinner time rolls around, simply shred the cooked chicken with two forks and mix together with veggies. Serve over flour tortillas and top with cheese, sour cream, guacamole etc. You can also make it into a burrito and enjoy!
This recipe serves up to four hungry people or six less hungry people.
Can You Cook Chicken in a Slow Cooker?
Yes, you can. Itโs best to cook chicken breasts on LOW for 6 hours. While you definitely can cook them on HIGH, they are more likely to be โdrier.โ While cooking chicken in a CrockPot, itโs important to not remove the lid during the cooking period. So, if a recipe says cook for 6 hours, keep the lid on for 6 hours before you check.
An option for juicer meat is to use chicken thighs in place of chicken breasts.
Cooked chicken needs to reach a temperature of 165ยฐ Fahrenheit to be safe. If the chickenย shreds easily, it should have reached a safe temperature.
What should I serve with chicken fajitas?
This dish is great with refried beans,ย Spanish or Mexican rice, and/or aย simple green side salad. Of course, you canโt go wrong with a little guacamole and tortilla chips either.
Low Carb Options
On a low carb or keto diet? You can wrap the chicken meat in lettuce leaves and serve with cauliflower rice. For added healthy fat, serve with some sliced avocado.

- 1 cup sour cream optional
- 1 cup guacamole optional

- 2 limes quartered
Instructions
- Spray crock with non-stick cooking spray or line with a removable liner.
- Perpare chicken breasts by cutting them in half.
- Add bell peppers and onions to the bottom of the crock of the slow cooker. Top with chicken.
- Add fajita seasoning, chicken broth, garlic, and can of Ro*Tel.
- Cook on low for 6 hours or high for 3 hours until the chicken is cooked thoroughly and shreds easily.
- Pour off the excess juices.
- Serve chicken on top of a tortillas, squeeze fresh lime juice, and top with your favorite toppings.
