Tips for Success

  • Storage: Keep leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
  • Rotel Swap: Rotel works well as a substitute for diced tomatoes. (It’s a smaller can at 10 ounces, but don’t worry – it still works perfectly.)
  • Don’t Stress the Sizes: If your cans don’t match the ounces exactly, that’s totally fine. Close enough is good enough.
  • Clean Out the Cupboard: Extra veggies or leftover cooked meats can be tossed right in – this soup is flexible and forgiving.
  • Season to Taste: Taste before serving and adjust spices as needed.
