Cajun Potato Soup Recipe

Ingredients

  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and diced
  • 1 ring andouille sausage
  • 3 ribs celery, diced
  • 1 red bell pepper, diced
  • 1 medium yellow onion, diced
  • 1 cup shredded cheddar cheese
  • ½ cup heavy cream
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons Cajun seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper

  • 6-quart crockpot or larger

Instructions

  1. Slice the sausage into ¼-inch thick rounds.
  2. Place all the ingredients into the crockpot, except for the heavy cream and shredded cheese. Stir to combine.
  3. Cook on high for 3 ½ hours or on low for 5 ½ hours.
  4. Add the heavy cream and shredded cheese. Stir well, then cook for an additional 30 minutes on low heat.
  5. Ladle into bowls and enjoy!
