Cheesy Chicken Broccoli Rice Casserole

Ingredients

The make this classic chicken casserole, you need the following ingredients:

  • 4 chicken breasts, cut into 1-inch cubes

  • 2 eggs
  • 2 cans of cream of chicken
  • 12 ounces broccoli, cooked
  • 1 cup milk
  • 2 cups shredded sharp Cheddar cheese

  • Chicken: You can use cooked rotisserie chicken in place of the chicken breast. Simply pull the meat off the bones and use in place of the cooked chicken in step 4
  • Rice: You can substitute cooked Minute Rice in place of the long-grain rice in step 4. For more texture, you can use cooked wild rice.
  • Soup: A can of cream of mushroom soup or broccoli cheddar soup will change the flavor profile.
  • Cheese: Stir 2 cups of Pepper Jack cheese in step 4 to up the spiciness of the dish.

Instructions

Step 1: Preheat your oven to 350 and spray a 9×13-inch baking dish or casserole dish with nonstick cooking spray.

Step 2: Cook rice according to package directions. (I like to use the Instant Pot to cook rice. Once I tried it, I haven’t gone back to cooking it on the stovetop.)

Step 3: Meanwhile, place a skillet over medium heat. Add olive oil and cook chicken until it is no longer pink inside. Season with salt, pepper, and garlic powder, if desired.

Step 4: In a large bowl, combine all the rice, cooked chicken, cream of chicken soup, milk, and eggs. 

Step 5: Place the chicken mixture in the prepared pan and smooth the top with the back of a spoon. Top with shredded cheddar cheese and cover the dish with foil

Step 6: Bake for 20. Remove the foil and bake for 10 more minutes.

Storing Leftover Chicken Casserole

Store any leftover casserole in an airtight container in the refrigerator. It is typically safe to store chicken dishes for up to four days according to the USDA.
