Casserole Variations and Tips
Want to change this up to add more flavor and/or texture? Here are some tips and variations you might want to try.
- Chicken: You can use cooked rotisserie chicken in place of the chicken breast. Simply pull the meat off the bones and use in place of the cooked chicken in step 4
- Rice: You can substitute cooked Minute Rice in place of the long-grain rice in step 4. For more texture, you can use cooked wild rice.
- Soup: A can of cream of mushroom soup or broccoli cheddar soup will change the flavor profile.
- Cheese: Stir 2 cups of Pepper Jack cheese in step 4 to up the spiciness of the dish.
Instructions
Step 1: Preheat your oven to 350 and spray a 9×13-inch baking dish or casserole dish with nonstick cooking spray.
Step 2: Cook rice according to package directions. (I like to use the Instant Pot to cook rice. Once I tried it, I haven’t gone back to cooking it on the stovetop.)
Step 3: Meanwhile, place a skillet over medium heat. Add olive oil and cook chicken until it is no longer pink inside. Season with salt, pepper, and garlic powder, if desired.
Step 4: In a large bowl, combine all the rice, cooked chicken, cream of chicken soup, milk, and eggs.
Step 5: Place the chicken mixture in the prepared pan and smooth the top with the back of a spoon. Top with shredded cheddar cheese and cover the dish with foil
