Berry Salad With Blueberry Vinaigrette

- 1 head Romain lettuce
- 1 head bok choy
- Grape or cherry tomatoes
- 4-6 ounces of blue cheese, goat cheese, or feta cheese
- 1 ½ cup fresh strawberries
- 1 ¼ cup fresh blueberries
Blueberry Balsamic Vinaigrette
- 1 cup blueberries (fresh or thawed)
- ¼ cup balsamic vinegar
- 2 ½ tablespoons honey
- 1 tablespoon lemon juice
- Pinch of black pepper
- Pinch of salt
- ½ cup garlic-infused olive oil

Instructions
- Prepare the greens: Chop the bottom root off the bok choy, about 1/2 inch from the bottom, and discard it. Chop the bok choy into bite-sized pieces (both the green & white parts) and wash. Wash the head of romaine lettuce, pat it dry, and tear it into bite-sized pieces.
- Add the greens to a salad bowl, toss them together, and set them aside.
- Cut the grape tomatoes in half and chop the strawberries.
- Add tomatoes, strawberries, blueberries, and blue cheese crumble to the salad.
- Place in the fridge to chill while making blueberry balsamic vinaigrette or until ready to serve.
Blueberry Vinaigrette
Add blueberries, honey, balsamic vinegar, lemon juice, salt, and pepper to a blender and blend until smooth. Slowly pour in the oil while blending at low speed. Blend the dressing until smooth and creamy.
