This recipe will show you how to prepare the filling for a delicious homemade blueberry pie, and all you need are fresh blueberries, a lemon, sugar, water, and cornstarch.

The result is a sweet fruit filling with a thick consistency that will complement your favorite crust recipe perfectly.

Blueberry pie filling is one of the easiest, most delicious homemade desserts you can make! The best part about it is that there are so many different ways to use it.

For example, blueberry pie filling goes great in a graham cracker crust or any other type of pre-baked shell. It makes an excellent topping for ice cream, cheesecake, and even waffles. You can’t go wrong with this recipe – it tastes wonderful stirred into homemade yogurt, too!

Let’s take a look at how to make this all-natural pie filling.

Ingredients

For this simple blueberry pie-filling recipe, you need the following ingredients:

  • 2 cups fresh blueberries
  • ¾ cup sugar
  • 1 cup water
  • 3 tsp lemon juice
  • lemon zest
  • 3 tbsp cornstarch
Fresh blueberries in a colander.

How To Make Blueberry Pie Filling

Before you get started, look over the blueberries and remove any stems that might have been missed. Give the blueberries a quick rinse and let the water drain.

Place the blueberries, sugar, ¾ cup water, lemon juice, and lemon zest in a small (or medium) saucepan on medium heat. You want to bring the mixture to a gentle boil.

To help release some of their juicy goodness, use a potato masher and mash some of the blueberries.

Combine cornstarch with ¼ cup of cold water to make a slurry. Make sure that there are no traces of dry cornstarch.

When the mixture is at a gentle boil, add the cornstarch slurry and stir. Let the hot mixture simmer for about 1-2 minutes on low heat.

Jar of freshly made blueberry sauce.

Remove it from the heat and allow it to cool for at least 10 minutes. You can serve it warm as a pie filling or after cooling, store it in an airtight container in the fridge for one week.
