Ingredients

This dish is made with a lot of basic ingredients that you should be able to find at all grocery stores.

  • 2 heads fresh cauliflower
  • 3 ½ cups shredded Cheddar cheese
  • 6 ounces cream cheese
  • ½ cup sour cream
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 8 slices crispy bacon
  • salt
  • black pepper
  • green onions (optional)

Directions

It’s always best to gather your ingredients and read through the recipe before beginning. So start by gathering all of the ingredients before making this dish.

Preheat your oven to 425° Fahrenheit. Spray a 9×13-inch baking dish with non-stick spray. Set the pan to the side and get ready to get cooking!

Cut the heads of cauliflower into florets that are bite-sized. You’re not going to use the stems in this recipe, so you can toss them into your compost pile. Place the cauliflower florets in a pot and fill the pot with 1 to 2-inches of water, cover, and steam for 5-7 minutes. The steamed cauliflower should be tender but still have a crunch. Drain the cooked cauliflower.

Drain the cauliflower.

Combine sour cream, cream cheese, 3 cups Cheddar cheese, onion powder, and garlic powder in a large mixing bowl.

Pour the cauliflower-cream cheese mixture into the prepared baking dish and bake in the preheated oven on the center rack for 25-30 minutes uncovered.

Remove the casserole from the oven and sprinkle the remaining cheese and chopped bacon. Bake for an additional 5 minutes.

Remove from oven and let cool for 5-10 minutes before serving. Sprinkle with chopped green onions, if desired.

Tips

Note about steaming cauliflower: If you have a steamer basket, use it. Otherwise, place the cauliflower in a pot, add 2-inches of water to the pot, cover, and steam/cook over medium-high heat for 5-7 minutes.

Can I Freeze Cauliflower Casserole?

Yes, you can. Be sure that the casserole is completely cool and then place in an airtight container. Freeze for up to 2 months.

Thaw the casserole overnight in the refrigerator. To reheat, place the thawed casserole into an oven-safe dish, cover with aluminum foil, and bake at 350 degrees for 20-25 minutes or until heated thoroughly.
