Tips for Making Southwest Chicken and Potato Casserole
- Serving idea. Pair it with a fresh green salad, a side of salsa, or a dollop of sour cream for a complete meal.
- Save time with pre-cooked chicken. Use rotisserie chicken or pre-packaged cooked chicken to cut down on prep time—just shred or chop it and mix it right in.
- Add crunch with tortilla strips. Look for crispy tortilla strips in the salad dressing aisle. Sprinkle them on top just before serving for extra texture and Southwest flair.
- Spice it up or tone it down. Use mild green chiles for a family-friendly version, or swap in diced jalapeños for a bit of heat.
