Caramel Sticky Buns
These Caramel Sticky Buns are so good, you’ll want to eat them all in one sitting! They’re sticky, sweet, and full of flavor. The best part is that they’re easy to make, so you can enjoy them any time you want.
What’s the difference between cinnamon rolls and sticky buns?
Cinnamon rolls are baked with a filling of cinnamon sugar and typically topped with icing. Sticky buns are placed upon a layer of caramel sauce, baked, and then inverted so that the caramel layer becomes the topping.
This recipe for sticky buns omes from the Bread Monk, and it’s a keeper. Sweet dough is filled with a cinnamon brown sugar filling and baked on top of a homemade caramel sauce. They’re best when they’re warm, so be sure to enjoy them soon after they’re made.

Ingredients
For the sticky bun dough, you need the following:
- Sour cream
- Vegetable oil
- Sugar
- Yeast
- Water
- Baking soda
- Salt
- Eggs
- Flour
For the sweet filling, you need:
- Brown sugar
- Granulated sugar
- All-purpose flour
- Ground cinnamon
- Butter
- Pecans
Homemade caramel sauce ingredients:
- Butter
- Brown sugar
- Corn syrup
Instructions
In a small bowl, proof yeast in the water. (Proofing yeast is easy – I promise! Simply place yeast in warm water to dissolve. The water should not be too hot or it will kill the yeast. It’s common to place a teaspoon of sugar to help “feed” the yeast. If the yeast does not start to “bubble,” don’t count on it to cause your dough to rise. Throw it out and try some other yeast.)
While the yeast is proofing, warm sour cream, vegetable oil, and sugar in a saucepan over medium heat โ do not let it boil. Remove the pan from the heat and let it cool to lukewarm. Stir in baking soda and salt.
Pour the sour cream mixture into a large bowl and add the yeast mixture and eggs, stirring until it’s smooth.
Add flour, about 1 cup at a time. Turn the dough out onto lightly floured board and knead for about 3 minutes. The dough will be quite sticky, but avoid the temptation to add too much more flour, just a tablespoon or two to keep the dough manageable. Allow the dough to rest for about 10 minutes (it will firm up nicely during this time.)
In a small bowl, prepare the filling by combining brown sugar, granulated sugar, flour, cinnamon, and butter; blend together with a pastry mixer or two knives until the mixture resembles coarse crumbs. Stir in the ยฝ cup of pecans.
Prepare Caramel Sauce by combining 1 stick of butter (ยฝ cup), 1 cup brown sugar, and ยผ cup corn syrup in a small saucepan. Cook over medium heat just until the sugar is dissolved. Remove the pan from heat and cool slightly.
Roll the dough out into a 18โ x 16โ rectangle on a floured surface. Sprinkle the dough with filling. Roll up from the long side, jelly roll style, and pinch to seal the edge (brush the edge with a little water if necessary to make it stick.)
Pour the caramel mixture into the bottom of a lightly greased 9×13-inch baking pan, and sprinkle with the remaining ยพ cup of nuts.
Cut dough crosswise into 12 rolls and place, cut side down, into the prepared pan. Cover and let the rolls rise for 45 to 60 minutes, or until nearly doubled.
Baking Time
Place the pan on a jelly roll pan to catch drips, and bake in a preheated 375ยฐ oven for 30 to 35 minutes. (Do not skip this step.) Carefully invert the rolls onto serving plate while still warm.
Kitchen Notes
After the sweet rolls have cooled, store them in an airtight container at room temperature. To serve, heat rolls in the microwave for 15-20 seconds.

- ยฝ cup chopped pecans
Caramel Sauce
- ยฝ cup butter
- 1 cup brown sugar
- ยผ cup corn syrup
- ยพ cup chopped pecans
Instructions
