Meatloaf Ingredients

  • 1 pound ground beef
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup milk
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard
  • 1/2 teaspoon Worcestershire sauce

Directions

Preheat the oven to 375°Fahrenheit. Grease a muffin pan with non-stick cooking spray or line it with muffin liners. (Parchment liners work great!) 

In a small bowl, whisk together 1/4 cup ketchup, brown sugar, mustard, and Worcestershire sauce for the topping. Set aside.

In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, milk, 1/4 cup ketchup, chopped onion, chopped bell pepper, garlic powder, dried oregano, salt, black pepper, and egg. Mix well until all ingredients are incorporated. Sometimes it really helps to use your hands to get it blended well.

Divide the meat mixture evenly among the muffin cups, pressing gently to pack the mixture.

Baking Time

Place muffins in the preheated oven and bake for 20-25 minutes. Bake until the meatloaf muffins are cooked through and the internal temperature reaches 160°Fahrenheit.

  1. does it matter if I use a metal muffin tin or a silicone one? the silicone ones are so much easier to clean. I assume it would affect the bake time.

    1. That’s an excellent question. There are conflicting answers to this question on the internet, so I recommend that you check the internal temperature at the 20 minute mark and go from there. If they have reached 160 degrees Fahrenheit, remove them from the oven, if not, continue baking them until they reach that temperature.

  2. I used pork panko instead of breadcrumbs and sugar-free BBQ sauce instead of ketchup mixture, and added shredded cheddar. Low carb yum!
