Ingredients

  • 2 pounds yellow potatoes
  • 3 egg yolks
  • ⅓ cup heavy cream
  • 4 tablespoons unsalted butter, divided
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Peel the potatoes and cut them into chunks.

  1. Cook the potatoes for about 25 minutes, or until fork-tender.
  2. Preheat the oven to 400°F and prepare a baking tray by spraying it with nonstick spray or lining it with parchment paper.
  3. Once the potatoes are cooked, drain them and cook off any remaining water for about 5 minutes over low heat. Place the cooked potatoes in a medium-sized bowl.
  4. Add heavy cream, salt, pepper, and 2 tablespoons of butter to the potatoes. Mash the potatoes until smooth with a potato masher.

TIP: Make sure there are no lumps in the mashed potatoes. Lumps will get caught in a decorator tip and will make it impossible to pipe the potato mixture.

  1. Put the mashed potatoes in a piping bag fitted with a star tip. Pipe rosettes onto the prepared baking sheet.
  2. Melt the remaining butter in the microwave for 20-30 seconds and brush it onto the potatoes.
  3. Bake in the oven for 20-25 minutes or until golden brown.
