Preheat oven to 350 degrees Fahrenheit. Lightly spray a 7x11-inch baking dish with nonstick cooking spray.
In large bowl add butter, sugar, vanilla, cocoa powder, salt, food coloring and vinegar (in that order), mixing between additions.
Whisk the eggs in a small bowl and stir into cocoa mix.
Fold in the flour until lightly combined.
Pour into greased pan.
Sprinkle with cookie crumbs.
Blend together cream cheese, sugar, and egg. Dollop over brownie base. Swirl with knife. Sprinkle with additional cookie crumbs.
Bake in the prepared oven for 40 minutes.
Cool. Drizzle with melted dark chocolate if desired. Store in an airtight container in the refrigerator.
