Preheat the air fryer to 325° F. Spray a 6" round cake pan with cooking spray. Separate biscuits and cut each into 4 pieces.
In a large bowl, stir granulated sugar with cinnamon. Toss biscuit pieces in the cinnamon and sugar mixture until well coated. Place each biscuit piece in prepared pan.
In a medium bowl, stir together butter and brown sugar. Pour mixture evenly over the biscuit pieces.
Place pan in the air fryer basket and cook 20 minutes until brown. Let cool 10 minutes before flipping bread out of the pan and serving.
