Preheat oven to 350°F. If you want to minimize cleanup, line a large baking sheet with parchment paper, though it is not necessary.
Cut the biscuits into quarters and place them on the baking sheet in a single layer. Bake for 8-10 minutes until just cooked through.
In a small bowl, mix sugar and cinnamon until well combined.
Once the biscuits are out of the oven, allow them to cool for 3-5 minutes. Dip the biscuit bites into the butter mixture, then roll them around in the cinnamon-sugar mixture.
Return the bites to the baking sheet and broil for 1-2 minutes until golden brown and caramelized. Be sure to keep an eye on them so that they don't burn.
Let them cool for a couple of minutes before serving.
