Prepare to indulge in a breakfast sensation that will please the entire family with this Tater Tot Breakfast Casserole. With its delightful combination of tater tots, savory meats, melty cheese, and fluffy eggs, this crowd-pleasing dish is a winner.
Cook bacon in a large skillet over medium-high heat. Place cooked bacon on a layer of paper towels to drain excess grease and set aside.
Drain fat from the skillet and return the skillet to the heat. Cook the sausage in the same skillet, breaking it into small pieces and stirring occasionally until fully cooked. Drain cooked sausage on paper towels and set aside.
Preheat the oven to 350°F/180° and lightly spray a 9 x 13-inch baking dish with cooking spray.
In a large mixing bowl, combine 1 ½ cups of shredded cheese, milk, eggs, and green onions. Season with salt and pepper. Set aside.
Place half of the tater tots in an even layer on the bottom of the dish. Spread the cooked sausage on top of the tater tots.
Pour the egg mixture over the sausage layer. Top with a single layer of the remaining tater tots. Sprinkle over the cooked bacon and the remaining cheese.
Bake the casserole for 40 minutes, or until the eggs have set. Garnish with fresh parsley, if using.
