Blueberry Pie Filling
This recipe will show you how to prepare the filling for a delicious homemade blueberry pie, and all you need are fresh blueberries, a lemon, sugar, water, and cornstarch. The result is a sweet fruit filling with a thick consistency that will complement your favorite crust recipe perfectly
Servings: 1 batch
- 2 cups blueberries
- ¾ cup sugar
- ¾ cup water
- 3 tsp lemon juice
- lemon zest
- ¼ cup water cold
- 3 tbsp cornstarch
In a small or medium-sized saucepan, combine blueberries, sugar, ¾ cup water, lemon juice, and lemon zest. Bring the mixture to a gentle boil. Using a potato masher, mash some of the blueberries.
Meanwhile, combine the cornstarch with ¼ cup cold water to create the slurry.
Once the blueberry mixture has come to a gentle boil, stir in the slurry, reduce the heat to a simmer, and cook for 1-2 minutes until the sauce thickens.
Remove the blueberry pie filling from the heat and allow to cool for at least 10 minutes before using.
You can make this completely organic by using organic products. Organic cornstarch is a little difficult to find, but it is available at Whole Foods and other specialty grocery stores and also online at places like Amazon.com.
