Ingredients

  • 3 bananas
  • 2 eggs
  • ½ cup unsalted butter melted
  • ½ cup light brown sugar
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350º Fahrenheit and prepare a muffin tin with baking cups.
  • In a large bowl, mash the bananas and add the eggs, melted butter, sour cream, sugar and vanilla. Use a whisk to combine the ingredients.
  • Using a rubber spatula, stir in flour, baking powder, baking soda and salt.
  • Fold in the chocolate chips.
  • Using an ice cream scoop (or spoon), divide batter into muffin cups.
  • Bake for 20-23 mins or until cooked through.
