Gluten-Free Banana Muffins With Chocolate Chips
These delicious Gluten-Free Banana Muffins with Chocolate Chips are great for a grab-and-go breakfast or enjoyed as an afternoon snack.
Servings: 18 muffins
- 3 bananas
- 2 eggs
- ½ cup unsalted butter melted
- ½ cup light brown sugar
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- 2 cups gluten-free flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup chocolate chips
Preheat the oven to 350º Fahrenheit and prepare a muffin tin with baking cups.
In a large bowl, mash the bananas and add the eggs, melted butter, sour cream, sugar and vanilla. Use a whisk to combine the ingredients.
Using a rubber spatula, stir in flour, baking powder, baking soda and salt.
Fold in the chocolate chips.
Using an ice cream scoop (or spoon), divide batter into muffin cups.
Bake for 20-23 mins or until cooked through.
