Korean Beef Bowls From The Best Grain-Free Family Meals on the Planet

Ingredients

  • cup coconut aminos
  • 2 ½ tablespoons honey
  • 2 tablespoons sesame oil
  • 3 garlic cloves
  • 1 tablespoon grated fresh ginger
  • 1 bunch scallions chopped, white and green parts separated
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon chili paste Sriracha
  • 2 tablespoons cooking oil
  • 1 ½ pounds ground beef
  • 1 tablespoon toasted sesame seeds optional
  • 3 to 4 cups cauliflower rice
  • 1 pound broccoli florets steamed

Instructions

  • In a small bowl, stir together the coconut aminos, honey, sesame oil, garlic, ginger, white scallion parts, pepper, and chili paste.
  • In a large skillet set over medium-high heat, heat the cooking oil. Brown the meat for 5 to 8 minutes, breaking it up with a spatula as it cooks. Continue cooking until the meat is no longer pink. Add the sauce to the skillet, bringing it to a quick boil, and then reduce the heat to low. Cover and simmer for about 4 minutes.
  • Serve warm, sprinkled with green scallion tops and sesame seeds (if using) over the cauliflower rice with steamed broccoli on the side.
