Massaman Chicken Curry is a traditional Thai dish that combines an exotic blend of spices and creamy coconut milk to make an irresistible and delightful curry chicken dish.

Start by making the creamy peanut sauce. Combine coconut milk, peanut butter, hoisin, brown sugar, curry powder, and fish sauce.

Saute onions and then add garlic and ginger.  Next, add chicken and cook until it is no longer pink.

Add creamy peanut sauce and diced potatoes to the skillet. Simmer for 15 to 20 minutes stirring occcasionally.

Stir in cashews. Garnish with cilantro, if desired. Serve with rice and a simple green salad.
