Place apple slices in a large bowl and add the juice of half a lemon. Add 1-2 teaspoons of the cinnamon sugar mixture to the apples and toss.

Brush butter onto each puff pastry sheet. Sprinkle the tops of the pastry sheets with the cinnamon sugar mixture. Cut each puff pastry sheet into six even strips.
