Second Step.
Make pickled red onions. Two tablespoons of the brine will be used in the next step.
Step Three.
Make creamy cilantro slaw by combining cabbage, Greek yogurt, cilantro, and pickled onion brine.
4. Toss shrimp with minced chipotle chiles, chili powder, 1 ½ teaspoons brown sugar, and ¼ teaspoon of salt together in a large bowl.
Step Five.
Preheat your air fryer to 400 degrees.
Place a layer of shrimp in the basket and cook shrimp until they are opaque – about 6 to 10 minutes.
Toss the shrimp halfway through cooking.
Last Step.
Place tortillas on a plate and top with shrimp, a small layer of cilantro slaw, and top with pickled onions.
Garnish with a touch of Greek yogurt or sour cream and a sprig of cilantro.
