Ingredients:

flour

sugar

egg whites

salt

vanilla

coconut

butter

milk

Beat egg whites until soft peaks form.  Fold egg whites into the batter. Beating the egg whites to this stage before adding to the cake mixture will help to create a lighter cake.

Pour the batter into the prepared cake pan and bake for 30 – 40 minutes. Once the cake has baked for 20 minutes, rotate the pan to help ensure even baking.

Top with homemade Coconut Cream Cheese Frosting and toasted coconut to complete the cake.
