Process graham crackers in a food processor until they become crumbs. Add melted butter and process again until combined. Place 2 tablespoons in the bottom of a dessert jar.
To make the cheesecake filling, beat cream cheese, powdered sugar, and vanilla extract in a mixing bowl. Set it aside.
Pour warm heavy cream over chopped chocolate in a mixing bowl. Let it sit for 5 minutes. Stir the mixture very slowly until it’s fully combined .
Add 4 heaping tablespoons of the chocolate ganache to the cheesecake mixture and fold gently until combined.
Transfer the chocolate cheesecake mixture to a piping bag. Snip the end off with scissors then pipe the cheesecake mixture into the jars leaving a space at the top for the chocolate ganache.
Add the remaining chocolate ganache to each jar filling them to the top.
