Hearty Cheesy Potato Soup Recipe

INGREDIENTS

– Bacon – Potatoes  – Onions  – Celery – Green onions – Carrots  – Chicken broth – Salt and pepper – Garlic cloves – Dried basil – Crushed red pepper – Hot sauce – Butter – Cream

Step 1: Cook bacon

Cook the bacon is a soup pot. Remove it but leave the drippings in to help flavor the soup. Break the bacon into pieces and store it in the refrigerator while the soup cooks.

Step 2: Prepare the Veggies

Peel and cube potatoes. Dice onions and trim edges off of celery. Rinse green onions and cut off the roots and top 1-2 inches. Chop into small pieces about 1/8 inch long.

Add potatoes, bag of carrots, onions, celery, green onions, chicken broth, spices and hot sauce to the soup pot and bring pot to low boil over medium-high heat.

Step 3: Cook the Soup

Simmer and then remove celery stalks. Add butter and heavy whipping cream and allow to simmer for an additional 30 minutes. Carefully puree soup mixture for a few seconds.

Add Butter and Cream

Ladle soup into bowls and garnish with cheese, bacon, green onions, and sour cream if desired.
