INGREDIENTS
extra virgin olive oil
white onion
ground beef
Italian seasoning
salt & pepper
red potatoes
beef broth
heavy cream
Cheddar cheese
fresh parsley
paprika
DIRECTIONS
Saute ground beef in onion in the Instant Pot. Add seasonings and cook.
Add red potatoes and broth, cover, and cook on HIGH for 3 minutes.
Naturally release pressure for 10 minutes, then quickly release remaining steam before removing the lid.
Slowly add cream by adding 2-3 TBSPs of the hot liquid before adding it to the IP.
Add the cheddar cheese, one cup at a time, and stir until completely melted. Serve immediately with some freshly chopped parsley and a sprinkle of smoked paprika for garnish, if desired. Enjoy!
