DIRECTIONS Saute ground beef in onion in the Instant Pot. Add seasonings and cook. Add red potatoes and broth, cover, and cook on HIGH for 3 minutes.
Naturally release pressure for 10 minutes, then quickly release remaining steam before removing the lid. Slowly add cream by adding 2-3 TBSPs of the hot liquid before adding it to the IP.
Add the cheddar cheese, one cup at a time, and stir until completely melted. Serve immediately with some freshly chopped parsley and a sprinkle of smoked paprika for garnish, if desired. Enjoy!
