Bakery-Style Blueberry Muffins
The sweet crumbly topping of these Bakery-Style Blueberry Muffins is the pièce de résistance. Make them and it will be love at first batch.
INGREDIENTS 2 1/2 c flour 2 1/2 t baking powder 1 t salt 1 c sugar 2 eggs 4 T butter 1/4 c vegetable oil 1 c buttermilk 2 t vanilla 2 c blueberries 1 T flour 1 T sugar
Whisk together flour, baking powder, salt, and sugar in a large bowl. In a separate bowl, whisk eggs, oil, buttermilk, vanilla, and melted butter.
Pour liquid ingredients into flour mixture and blend until moistened. Combine blueberries, flour, and sugar and fold into batter.
Sweet Crumb Topping
Combine the following: 3 Tablespoons sugar 3 Tablespoons brown sugar 1/3 cup flour 5 Tablespoons butter softened
Spoon batter into 18 prepared muffin cups and sprinkle with topping. Bake at 425 degrees for 18-20 minutes or until done.
