Baked Cheesecake with Oatmeal Cookie Crust

This baked cheesecake has three delicious layers – 1. a cookie-like crust, 2. a luscious creamy cheesecake filling, and 3. a sweetened sour cream topping.

Ingredients to make the crust: Oats Brown Sugar Pecans Butter

Cheesecake Filling Ingredients

16 ounces cream cheese ½ cup sugar 1 Tbsp lemon juice 3 eggs 2 cups sour cream 2 Tbsps sugar 1 teaspoon vanilla

Start by creaming together cream cheese, sugar, eggs, and sour cream.

Pour into the prepared crust and bake at 350 degrees (F) for about 60 minutes - until set. Allow cheesecake to cool for 10 minutes.  Meanwhile, combine 1 cup sour cream, 2 tablespoons sugar and 1 teaspoon vanilla. Mix well in small bowl.  Spread over cooled cheesecake.
