These Sweet and Crunchy Nuts are a low carb snack that is perfect for satisfying that need for something – well, sweet and crunchy. They’re made with SPLENDA® Naturals Stevia Sweetener and have 9 grams of carbs, 3 grams of fiber, and 5 grams of protein.
Before heading into the New Year, I had already determined that 2019 would be the year that I got my “act together.” I’ll be celebrating a HUGE birthday this year and I want to be in the best shape possible.
Life took an unexpected turn for my family at the beginning of the year and it has given me more reasons to be as healthy as possible. It makes me think of when you get on an airplane and are instructed to put your oxygen mask on before you assist others with their masks.
If you don’t take care of yourself, then you won’t be able to help those who need you when they need you the most.
So this year, I will be keeping the traditional “lose weight” and “get healthy” resolutions. Over the years it has become so clear to me that what most of us need to do to help achieve that is to limit our carbohydrate consumption.
I know that cutting back on carbs can be daunting – they’re everywhere. But I am pleased to say that you can do it. There are recipes and tasty food and drink items out there that are lower in carbs. For starters, here is the recipe for Sweet and Crunchy Nuts, courtesy of SPLENDA® Naturals Stevia Sweetener.
Read on after the recipe to learn about a few products that I like plus a few products that I have recently started using that will help you and me stay on track with our resolutions.
- ¾ cup pecan halves
- ¾ cup walnut halves
- ½ cup whole blanched almonds
- 2 egg whites, lightly beaten
- 16 packets SPLENDA® Naturals Stevia Sweetener
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
Preheat oven to 300° F. Spray a 15x10x1-inch pan with cooking spray.
In a mixing bowl, combine pecans, walnuts and almonds. Add egg whites, tossing to coat.
In a separate bowl, combine SPLENDA® Sweetener, cinnamon and salt. Sprinkle over nuts, tossing to coat. Spread mixture evenly in prepared pan.
Bake for 30-40 minutes or until nuts are toasted, stirring every 10 minutes. Cool on waxed paper. Store in an airtight container.

Splenda Naturals Stevia
For those times that I want to indulge with sweet coffee, I use Splenda Naturals Stevia. It is 100% natural and has no aftertaste and zero calories. (There is nothing artificial in Splenda Natural Stevia – including no sucralose.) For my tastes, I like to use 2 packets and either half-and-half or a little heavy whipping cream.
Michelob ULTRA Pure Gold
I am not much of a beer drinker, so when I do have a beer, I am quite picky. There are several things that I LOVE about Michelob ULTRA Pure Gold – it’s made with ORGANIC grains, has only 2.5 grams of carbs and 85 calories, and tastes pretty darn good. It should taste good because it is triple filtered and has no artificial colors or flavors. (Remember to always enjoy adult beverages responsibly!)
This is a line of products that is pretty new to me, but that I will be using more of in the future. The line includes:
- Gold Standard Whey – this is a powdered mix that has 24 grams of protein that you mix with water (or other beverage). Each serving has 120 calories and 2 grams or less of sugar. This product has already come in handy at my home when a family member did not feel like eating yet really needed to get some nourishment.
- Amino Energy – this is another mix and it has a fruity flavor. It has caffeine from natural sources and has only 5 calories and 0 grams of sugar.
- Protein Crip – these are gluten-free bars that are packed with 20g of protein. They’re great for eating at work or on the run – simply tuck one in your purse, briefcase, or suitcase.
