Roast Beef Sandwich With Creamy Horseradish Sauce

Roast Beef Sandwich with Creamy Horseradish Sauce

In my dreams, I picture myself traveling throughout Europe with my family, stopping to enjoy a simple picnic lunch – one with a good bottle of wine and good food – before traveling on to explore the wonders of the continent.  Until that becomes reality, there isn’t any reason that I cannot go ahead and have that picnic lunch while I explore areas that are a bit closer to home.

In this post, I am sharing with you a recipe for a delicious sandwich that pairs well with Estancia Cabernet Sauvignon – Roast Beef Sandwich With Creamy Horseradish Sauce.  They’re both perfect for filling a picnic basket.

Ingredients

For this simple picnic-worthy sandwich, you need the following ingredients:

  • 1 Italian or French baguette
  • 2 Tbsps butter
  • ⅓ pound thinly sliced deli roast beef
  • curly leaf lettuce
  • 1 tomato

Creamy Horseradish Sauce

  • ½ cup Greek yogurt or sour cream
  • 3 Tablespoons prepared grated horseradish
  • ¼ teaspoon lemon juice
  • pinch of salt
  • pinch of white pepper

Instructions

To make it, start by making the creamy horseradish sauce by combining Greek yogurt, grated horseradish, lemon juice, and salt and pepper. Place the sauce in the refrigerator for 1-2 hours before using.

When you get ready to make the sandwiches, slice the baguette in half and and place a small layer of butter on each half. (The butter layer will help to prevent the sandwich from getting too soggy.)

Layer the bottom half with roast beef, lettuce, and tomato.

Place a layer of creamy horseradish sauce on the top half and place on top of the prepared bottom half.
