Serrano chile peppers get their name Serrano which means “from the mountains” and refers to the Sierra mountain region located in the Mexican states of Puebla and Hidalgo where the pepper originated. The Scoville rating of the serrano pepper is 10,000 to 23,000 units, making it a lot hotter than a jalapeño (2,500 – 8,000 SHU).
If you like your food VERY SPICY, then feel free to substitute a serrano pepper for the jalapeno. If you are brave enough to do that, be sure to have a glass of cold milk standing by to help cool down your palate.
