I could not have had better timing. This morning in my Facebook feed was a link shared by one of my favorite food bloggers, David Lebovitz, to an article in The Telegraph which was published in 2012. The headline of the article is Chocolate cake breakfast could help you lose weight. (You can read the article by clicking here.) I am like, bring it on! Could life get any sweeter?
Anyway, the timing – Kismet! It just so happened that I was planning on playing around with a pouch of chocolate muffin/cupcake mix that I had purchased at EarthFare. It’s a gluten-free, paleo friendly mix. I have tried Simple Mills mixes before and really enjoyed them. Today, though, I decided to add a few chocolate chips to the mix, bake it in mini loaf pans, and drizzle with more chocolate.
I took the pouch of mix plus the ingredients needed to make the muffins. I added 1/3 cup of chocolate chips and prepared it according to directions. However, instead of putting the mix into muffin cups, I used two disposable mini muffin loaf pans as I mentioned above and baked them for 23 minutes each. After they cooled, I took another 1/3 cup of chocolate chips + 1 teaspoon of coconut oil and heated it in my microwave for 30 seconds on HIGH. I then stirred until the mixture became smooth (well, almost) and drizzled it on top of the loaves.
I thought the loaves came out pretty good. Chocolate for breakfast does seem to be a good way to start the day, I must say. At this moment,the expression from Jacques Torres keeps coming to mind – Life is short. Eat dessert first. I wonder if he knew all along…
