I am so thankful for the times that I am able to get together with friends for lunch. With most of my friends being nurses, it seems like it is getting harder and harder to do with our busy schedules. Fortunately we were able to carve out an hour the other day (my birthday!) and we met at Panera.
When we walked into the restaurant, there is a sign saying Eat Clean. It mentions that Panera has removed artificial colors, sweeteners, flavors and preservatives from their salad dressings. “Because nature doesn’t need a lab. And because we think clean food just tastes better.” I couldn’t agree more!
I always knew that their salads were good, but now I feel even better about eating them.
I usually order the BBQ Chicken Salad (my favorite), but I thought I would order something different so I got the Mediterranean Chicken & Quinoa Salad. It is made with a base of kale and romaine lettuce and topped with organic quinoa, cucumbers, kalamata olives, tomato sofrito and toasted almonds in Greek dressing. On top is a layer of sliced chicken. (Did you know that they use chicken that was raised without antibiotics?) My salad was delicious. If you are ever in the mood for a Greek salad, this is a good option.
My friends and I enjoyed eating a healthy, delicious lunch and catching up on what has been happening in our lives. I hope that we get to do it again soon.
