Honey-Glazed Carrots

Honey-glazed carrots are the perfect side dish for any meal. Carrots are covered in a sweet honey glaze and roasted to perfection in a Dutch oven. These carrots are so easy to make and only require a handful of ingredients.

Roasting carrots in a Dutch oven is the best way to get them nice and crispy on the outside while keeping them tender on the inside while adding depth of flavor. The honey glaze also helps to keep the carrots from drying out during cooking.

For this recipe, both brown sugar and honey are used to create the glaze. The brown sugar helps to add a little bit of depth to the flavor while the honey provides the sweetness.

Cooked carrots have a natural sweetness, but the addition of honey and brown sugar takes them to a whole new level. The carrots come out of the oven glistening and are so irresistible.

Serve these carrots as a side dish with roasted chicken or grilled steak. Honey-glazed carrots also make a great holiday side dish.

Let’s take a look at how to make this simple side dish which can be made in the oven or on a campfire.

Equipment

To make this recipe, you need a (10-inch) Dutch oven, 18 hot coals, and a cooking temperature of 325 degrees.

Ingredients

In addition to a Dutch oven, you need the following ingredients:

  • ¼ cup butter
  • 1 pound peeled and cut baby carrots
  • ½ cup honey
  • 2 tablespoons brown sugar
Baby carrots, brown sugar, butter, and honey.

Instructions

Place butter in a warmed* Dutch oven and melt. Add carrots to melted butter, pour honey over top, and sprinkle evenly with brown sugar; stir to coat. 

Cover with the lid and bake for 30 minutes or until carrots are fork-tender, using 8 coals underneath the oven and 10 on top.

*Tip: To warm the Dutch oven, you can place it in the sun or use about 4 coals underneath the oven for just a few minutes. Remember, you want it warm, not hot.

It took about 50 minutes of cooking time at 325 degrees in my oven to get these done.

Tip

Use a bag of baby carrots from the grocery store helps to simplify meal prep.
