Notes and Tips

When making these muffins, it is important to not overmix the batter. Overmixing can cause the muffins to be dense and dry. It is also important to use room temperature ingredients, as this will ensure that all of the ingredients are properly incorporated.

For an extra special treat, try adding a few tablespoons of chopped nuts or dried fruit to the batter before baking. This will add a nice crunch and flavor to the muffins.

While you could use regular chocolate chips or chocolate chunks, using mini chocolate chips will ensure that the chocolate is evenly distributed throughout the muffins.

What makes muffins rise high?

Muffins rise high due to the combination of baking powder and/or baking soda, which are leavening agents that create air bubbles in the batter. The air bubbles expand when heated, causing the muffin to rise. Additionally, creaming butter and sugar together until light and fluffy will also help create a light and fluffy texture in the muffins.

Why are my chocolate chip muffins dry?

Overmixing causes the gluten in the flour to become overworked, resulting in a dense and dry texture. Additionally, using too much flour or not enough liquid can also cause dryness. It is important to measure ingredients accurately and mix until just combined for best results.

Why are my muffins not light and fluffy?

The buttermilk in this recipe makes these muffins dense and moist. If you are looking for a muffin with a lighter and fluffier texture, check out our recipe for Blueberry Bakery-Style Muffins.
