There is nothing quite like the aroma of fresh yeast bread baking in my oven.
This year I am exploring going gluten-free and will have to learn how to adapt some of my favorite bread recipes. I have to. There are so many great bread recipes. I especially love Chocolate Bread and could eat it morning, noon, and night. After all, it’s made using Nutella.
Whenever I make Chocolate Bread, I always “braid” it. It’s a simple way to make the bread look elegant.
To make a braid:
Roll out freshly made dough, or dough that has been frozen and thawed, into a large rectangle.
Take your favorite filling…
…and slather a generous amount down the middle third. (My middles are usually quite generous because I like a lot of filling.)
Along the length of each side cut 1-inch strips. Stop cutting just before you reach the filling.
Starting at one end, take the top strip and fold it at an angle over the filling so that it almost touches the other side.
Repeat this step, alternating sides as you go.
When you reach the end be sure to tuck, or pinch, the final piece. This may not be real pretty and you can always cut it off after it has baked. (You can consider it your sample piece and enjoy it.) Your loaf will now be ready for its second rising period.
