For this year’s grilling season, try something new – a Southwest Chicken Bowl. It’s somewhat similar to what is served at those trendy little southwest quick-serve restaurants. Using a box of Suddenly Salad’s Southwest Grains, it’s a snap to make and I will share with you how. You probably already have many of the ingredients on hand. Feel free to make changes to suit your taste.
Start by following the directions on the box of Suddenly Salad. While the bag of grains is gently boiling, grill 2 chicken breasts until internal temperature reaches 165 degrees Fahrenheit. Allow the chicken to rest for 5 minutes and then cut it into strips.
Drain the grains and prepare the Dressing Mix according to the instructions on the box. Place a layer of crushed tortillas chips in the bottom of your bowls. Layer the chopped lettuce on top of the chips, followed by the Southwest Grains. Top with diced tomatoes, sliced olives, avocado, and chicken strips. Drizzle Ranch dressing over the chicken and top with jalapenos, if you’d like.
